Fregula is a typical Sardinian pasta similar to couscous. In ancient times it was made by hand.
About the Fregula s’antiga’s fregula, it is handmade with geniune ingreditens just like our ancestors used to do.

There is always a secret behind every product. The secret of family rituals and the hands that caress the “semola” inside the sieve, is what lies behind the fregula of Fregula Antiga.

This is the story of an ancient recipe that has been handed down from grandmother to grandchildren. Grandmother Epifania revealed semola’s secrets to Angelina and Giorgio. Then the recepy has been handed down with those instinctive gestures up to the fourth generation with Monica and Giuliano.

The secret, as Monica explained to us, lies in passion, dexterity and 100% Sardinian ingredients.
The durum wheat semola is grown and ground in Sardinia; the eggs come only from free-range hens and the saffron is chosen exclusively from local productions a pinch of water and a pinch of salt. This is where the magic comes from!

It is a product with unique nutritional and organoleptic characteristics, excellent with seafood, for cold garden vegetable salads, or risotto with mushrooms.
