Bottarga pâté is made with bottarga, which is a kind of caviar made from the eggs of a fish called “Muggine” in Sardinian, or mullet. The mullet roe is carefully selected and dried naturally, without the addition of chemicals at any stage of production, to ensure its authenticity and quality. All processing steps are carried out in Cabras.
It is excellent with bread and butter crostini and a good glass of white wine.
