Strawberry tree Honey is one of the rarest honey in the world. The Strawberry tree is a typical plant of the Mediterranean area with white flowers that bloom between October and November. Given the period of its flowering, the honey can be produced only in the presence of temperatures that are not too rigid. Sardinia thanks to its mild autumn climate is perfect for the production of this rare honey.

Colour: liquid amber colour; when it is crystallized the colour changes in light hazel to brown with grey-green hues .
Bouquet: Intense and rich in nuances among which it is possible to recognize: bitter herbs, cocoa bean, rhubarb and roasted coffee.
Taste: Bitter  and persistent. A bitter flavour that leaves its mark and brings with it herbaceous aromas of chicory, toasted flavours of coffee and gentian roots.
Pairings: it can be combined by contrast with sweet cheeses or by assonance with bitter vegetables such as thistle or artichoke. Excellent for flavoring and enhancing the taste of bitter-tasting drinks.
