Bottarga is a Cabras’ unique and fine product made from mullet’s egg. It is also called the Cabras’ gold from its golden colour. Bottarga is also called Sardinian caviar.

Bottarga powder is used to flavour pasta, risottos and fregula.

The workmanship is unique: bottarga is carefully selected and dried in a natural way, without chemicals’  addition at any stage of production to guarantee its genuineness and quality. All stages of processing are performed in Cabras.

Each product is processed according to the Cabras’ traditions pass on from generation to generation. According to some reconstructions this process already existed 4000 years ago by the Phoenicians and would therefore have reached our times always following the same natural procedure.

The company has obtained various recognitions including the “Gambero Rosso”award.
