Maccarrones are inspired by Maccarrones de Busa. An ancient pasta made strictly by hand, whose name comes from the characteristic ferretto with which it was prepared, the busa or ferrittu precisely.
They are made by bronze drawing with slow drying at low temperature.

They go well with all traditional sauces especially wild boar sauce, but lend themselves to vegetarian innovations.
